Flamberge is swappable for nearly every dex weapon(that's what I'm doing mid fight anyway). As for the armor and a missing ring: You can put a DWGR on this set up for ninja flip, wolf for 72 poise or ,what I've been trying lately, ring of steel protection for 371 physical defense. Another quite optimal set up is to put Havel's ring with Giants gauntlets. That'll give you 53 poise and 384 physical defense. I personally prefer the set up without giant's gauntlets as I don't see 53 poise to be necessary as well as the fact that you can choose to use either ring of steel protection or one of the stone plate rings according to the situation.
