This is an update to my previous build. I've added 21 or so poise and only lost a little defense. 74 Poise should let you get smacked once in the face by Smough's Hammer and still keep your composure.
If dual-wielding is anything like it was in Demon's Souls, this should be your super-death combo.

You can possibly take off the Wolf Ring for the Cloranthy Ring if you're confident in your dodging and breaking out of a Stunlock. And I attempted to supply Pyromancies for nearly every situation. So I picked the best from each category except for the Ranged. As GCF takes two slots. And another three or so points in ATtunement would be a waste.
