This is my take on a quality build (27/40). This build is very flexible and allows you to adapt to most situations with a simple weapon swap. Here are some answers to probable questions.
Q: Why 58 Poise?
A: With 56 being a vital poise breakpoint my only focus was to make or break that with armor I like. Unlike players who go for 56 no matter how goofy they look, i.e. you Hollow Soldier Waistcloth wearin' %^^*#}#^^!!
Q: Why 58 Endurance?
A: 58 Endurance allows me to use my heaviest setup while maintaining a fast roll, i.e. Grass Crest Shield, Claymore, Composite Bow, and Demon's Spear.
Q: Why 27 Strength?
A: A quality build is a term that's used to describe a build with 27 Strength, and 40 Dexterity. Typically utilizing weapons that scale C/C/-/-. So essentially this build revolves around the Claymore. You see, when you two-hand a weapon, not only is the Strength requirement reduced, your Strength is multiplied by 1.5. 27x1.5=40.5. So boom, 40 Strength.
Q: Why that armor?
A: I enjoy the look of mid armor under a coat/robe. In this case it's important that you choose a female so you can acquire dat fur around the collar.
Q: Why use an off-hand Hand Axe?
A: Heh, you can use a shield if you prefer; such as the Grass Crest Shield. But I like how it combos with the Claymore. It's attack speed is also much faster so let's say you're aiming with the bow, when they roll towards you switch real quick to your Hand Axe, L2, get out. ~200 free damage. But sometimes a shield can't hurt.

If the armor just ain't your style, switch to something you like! But be sure to edit Endurance as such. Don't wanna be wasting points on weight you don't need! Have fun.
