30 faith for Sunlight Blade
Great Magic Barrier, or how to say \\"fuck you\\" to every mage out there.
Wrath of the Gods, or how to flip the bird to backstab fishers. Can be replaced with Emit Force if you don't want to use a bow (that I didn't include as it's optional) because weight restrictions.
Speaking of weight (hooray for convenient, unplanned transitions), you have enough burden left for a 14 unit weapon, like the Greataxe. However, you won't be able to put a bow if you use the said weapon. This is when Emit Force comes in handy. Otherwise, use whatever weapon you want.
Armor of Artorias because it's quite classy.
Steel Gauntlets for poise and defense
Havel's Leggings, just for poise and goes well with the armor. All this for 57 poise.
Since you will be buffing yourself with GMB (or replenishment, whether you like) you won't be able to use a green blossom. This is when the Grass Crest Shield and the Cloranthy Ring kick in. They got your back, bro.
Battle tip: Don't hesitate to mix weapons for variety. Think and find out which combinations suit you best.
Switch the Cloranthy Ring for the Leo Ring if you use thrust weapons. A Halberd with Sunlight Blade, backed up with the Leo Ring does ridiculous damage, often killing your opponent in a mere 2~3 hits assuming you land counters.
I'm sure you'll find lots of other useful tactics.
