Start as Warrior and level STR to 16 in Firelink to use the Gravelor Sword (2h) as early as possible. After that, just continue leveling and eventually swap weapons until Murakumo becomes viable.
If you want 61 poise, remove the gauntles and change headgear to Giants.
This is a no-sorcery build; if you want sorcery, it's better to start with a pyromancer (but it will take some time to be able to wield the Gravelord Sword)
