Use Iron Flesh to tank hits and wreak havoc.
Use Chaos Composite Bow +5 against spell casters.
Use Black Flame to drain turtlers' stamina.
Use Fire Tempest in narrow places like bridges.
P.S.
You can use Grass Crest Shield if you like to two hand your weapon.
You can lower vitality to add str/dex to have a wider variety of weapons, as I personally like to use the claymore and the bastard sword.
