Kind of what I imagined up to imitate SOLDIER's from Final Fantasy 7, it's not tested yet, but there are many weapon choices you can change to, to fit your needs!
-Chaos+5 Dark Sword- for overall quicker attacks, with a fun move set, (downside is it's a hassle to get)
-Stone Greatsword- one of the weapons that actually made me want to make this build in the first place, quite strong on it's own, and it's two-handed R2 is nice, one of my weapons of choice for it
-Greatlord Greatsword- You have the extra stats for it, so why not? It's kinda weak in the grand scheme of things, but if you wanna mix it up, or like it's moveset, this would be a good tech.
-Obsidian Greatsword- It's got a wonderful AoE attack, pretty light and at lower-ish levels it could have a decent attack power, but easily falls under other choice in attack power. Your choice really, just personal preference.
-Chaos+5 Murakumo- It's got a fun move-set, the Chaos +5 of it is also quite powerful, definitely a good choice to switch to
-Chaos+5 Washing Pole- Long reach and decent attack, good for if you want a lighter alternative weapon
-Gravelord Greatsword- If you have the stats for it, it's great for a weapon that's easy to get in the beginning of the game.
-Chaos+5 Zweihander- If you like this weapon go for it, you got the ability, but I personally find it too slow, but when you do land a hit, it's definitely rewarding.
-Golem Axe- Has a fancy attack, but it's really heavy, and has quite low attack rating might be decent at lower levels
-Chaos+5 Great Scythe- This weapon is alot of fun, and looks bad ass, and has a pretty good attack power.
If it meets the requirements, and you wanna use it, go for it.
Use Power Within very sparingly, save it for when the time is right, and even stack it with the Stone Greatswords R2 (that's why I like it so much)
Don't forget your fireballs.
You can use Alluring Skulls to deter enemies
And Lloyds Talismans to prevent Estus users while invading.
