(Literally my first build please don't crucify me if it's shite)
Armor choice is entirely for looks, use whatever you think looks real nice. Shiva's shield for deflection+parrying (if deflection actually works in pvp, still not sure on that,) estoc for moveset and Leo ring counter hits. Ring of FAP obviously for the great spread of bonuses.
With dung pies, poison knives, toxic mist, and poison arrows, you have a lot of tools to annoy your enemy. you can try to build up toxic/poison then take a more defensive approach and force your opponent to be aggressive, which can result in parries (dat thrusting sword bonus) or deflections (mmmmm love that counter hit bonus.)
Pine resin is there for poisoning them early in the fight. Knives for when you don't have time to switch to the bow and you want to add more pressure.
Fire surge is there for chip kills mostly, poison mist serves the same purpose as toxic but with more uses. Great chaos fireball is pretty strong and creates a temporary danger zone that you can use in your spacing, if you don't find it useful I would recommend great fireball and another poison mist or toxic mist (to add to your arsenal of crap you can be annoying the opponent with.)
If you want to play this build in a Nice, Friendly, Casual (tm) way make sure you ONLY get kills with poison, toxic, ripostes, deflection counter hits, or fire surge chip damage. After they're poisoned, only do non-shielded attacks when the opponent is using moss to cure it (direct offense is for nerds that don't have poison.) This will ensure the opponent is Not Frustrated and Having a Good Time (tm.)
And remember, if at any point this build is at a disadvantage, your opponent is probably cheating and it is your holy duty to make sure they are banned from GFWL
