This is what you should look like in the end, try to get hold of the Claymore as soon as you can, there is one on the bridge with the harmless dragon. As for shield a warrior starts with a heater shield wich is pretty good and is what you roll with untill you can get a balder shield and then a silver Knight shield, don't be afraid to upgrade it since you need a +10 and soul of sif to get greatshield of artorias. Keep your normal armor untill you get the elite Knight set in the darkroot garden. If you don't want to be in the dragon covenant you can use havels helmet though you will need a tiny bit more endurance so you won't slowwalk.
