DISCLAIMER: This build is not for everyone. If you prefer to rely on gimmicks, cheesy tactics, spam, etc., then you will be better off looking up a OHKO dark bead build or something similar. However, if you enjoy relying on your own skill and understanding of the nuances of the combat system, look no further.
This build is extremely straightforward... no spells, no miracles, nothing fancy. It's a no nonsense melee (for the most part) build which relies on your strength/dexterity stats, and the occasional resin buff, to deal damage.
In my opinion, the claymore is your best weapon choice. However, being a quality build (40/40 str/dex), you have a lot of options when it comes to your main weapon. Although it is best to choose weapons with C/C scaling or as close to that as possible to get the most out of your stat points. Estoc, Sunlight Straight Sword, Longsword, Bastard Sword, Greatsword, Zweihander, Darksword, Silver Knight Spear... all excellent weapon choices and the list goes on.
As for armor choices, I personally prefer light armor so I chose to display my favorite armor set up when I use a claymore or a silver knight spear. Notice I do use the wolf ring to get my poise up to a suitable amount. Your armor will largely depend on your weapon preference and whether or not you like to use Havel's ring or the wolf ring. Again, the main theme of this build is versatility.
As far as tactics and play style are concerned... there are no gimmicks, no spells, no miracles, no pyromancies, no OHKO, etc.. All you have at your disposal both offensively and defensively is your skill at the game. Eat some grass, apply some resin, and get to work.
