I decided to challenge myself to go through the game using only the starting equipment as a Warrior, I named it the 'Noob run', there were no rules other than I could only use the equipment that I started with, and any variation of it. Needless to say, it was challenging at first, but extremely fun.
When making the build I would suggest focusing on Vitality and Endurance, as they are all you really need,once you get both of them up to 50 then pump all of your left over points into Resistance as for this build it actually benefits you greater than every other stat (RESISTANCE OP, PLEASE NERF).
When you can however you should always focus on upgrading your Longsword(s) as you are not focusing on their rather terrible scaling but moreso their base damage, it is for this reason that I would recommend getting one down the fire path the moment after you defeat Quelaag, later on you will retrieve the Chaos Flame ember and upgrade it down that path as soon as you can farm Chaos Eaters. While doing this however you're gonna want to try and get a secondary Longsword down the lightning path, this will be used to defeat the Centipede demon and any other fire resistant enemies, also useful for if you're low on Humanity.
The rings shown: FaP and Wolf are what I use for PvP (Yes you can effectively PvP with this build), I would suggest switching out the Wolf Ring for the Cloranthy Ring when doing PvE and for all bosses minus Nito due to the tank strategies being the best ones (You can tank Nito properly if you have the Vitality and have been upgrading your Hard Leather armour like a good little noob).
I don't really need to put item uses but here ya go:
Estus Flask - For decimating opponents in a single use, just stand there naked and spam these babies and you'll be victorious.
Humanity - For healing during duels with the uncivil swine who know not of the dueling etiquette.
Green Blossom - STAMINA. ALL THE TIME. THESE MAKE EVERYTHING EASIER.
