Vitality ; I beat new game + at 30 and i am not good in dodge for attacks :) some boss fight was " hit each other 1 by 1 " :) and that was enough for me ( with right armor set ) better guy in dodge need less Vitality there .... for new game +2 rise it 30 level.
Dexterity ; u can use all dex stats weapons really effective
Strength ; out of greataxe and greatsword weapons u can use many of them
Intelligence ; 25 is base level for Crystal Magic Weapon & Homing Crystal Soulmass (24)
Armor set : I like Elite Knight Armor set , it has enough protection for many bosses fight . also u can gear "Havel's Chest" still u will be under %50 .....
for less than %25 gear u can use "Gold-Hemmed Black Set" but change "Wolf Ring" to "Cloranthy Ring \t" .... ( if u good in dodge )
