For PvE only. This should get you through NG+7 relatively painlessly.
Tough enemies like the titanite demons should fall instantly or almost to your dark sorcery.
Most bosses will go down quite fast if you buff Power Within and CMW just outside the fog wall and dodge their attacks properly with the DWGR. Unless they resist magic, you should use Pursuers/Dark Bead to do some big damage. If the boss lasts long enough for PW to end, remember to use a blossom!
Any boss can kill you in NG+7 no matter what, but bosses that pose the biggest challenge probably include: Artorias, Manus, Kalameet and Gwyn. Black Flame will easily stagger Artorias while he's buffing up. Parries destroy Gwin (hornet ring and weapon buffs recommended). For the other 2, you either need to become pretty good at dodging their attacks, or equip a good greatshield and full giant set and try to block them.
If you feel like leveling even more than this, probably increase that Vitality or maybe the Attunement, up to personal preference. Keep in mind that with high enough Vitality the health bar will max out and be unable to display your entire health.
