A simple Darkmoon Blade buff build. The ring slot can be swapped out as needed (equipping the Wolf Ring will net you just enough poise to tank an ultra greatsword hit) while still fastrolling. Just about any dex-scaling weapon can be used as most of them are pretty light.
If you want to sacrifice that second ring slot for more defense, equip Havel's Ring and wear the Elite Knight's Helmet, Giant Armor, Steel Gauntlets, and Balder Leggings. You won't have quite enough poise to withstand an ultra greatsword, but you'll be past the 61 breakpoint to withstand just about anything else.
