Maximum damage. Use power within, green blossom, and charcoal pine resin and do whatever you need to to hit them. Who needs blocking and dodging when you're buffing a 712 dmg weapon. Don't know if it's the website or game design, but while 2handing, damage doesn't raise after 68 str. If it does in the game, divert vitality as needed to max it out.
