Havel's Shield's buff gives the player deflection to attacks and a great amount of poise. This removes the need for using armor for poise, allowing us to instead use the Dragon Body for the Dragon Shout and natural fist damage. The shield is in the right hand slot so it can be two handed to access the bodybuff, so more points can be allotted to Vit than unnecessary points into Str.
I chose Manserpent Greatsword because it synergizes well with the points put into Str for Havel's Shield. You could remove a lot of those points in Vit to get some Dex to use a different weapon such as a Halberd, but I see MSGS as a very obvious weapon of choice for this build. Going bare fisted in the other hand allows us to parry, but also get in a quick jab on the ones that are quick to dodge for a powerful, 400 AR punch.
The playstyle for this is not defensive, despite a lot of things going for it defensively. Fastroll, dragon shouts, and the lack of a shield in the left hand all add up to mean a very active, offensive playstyle is recommended.
