Using the (Silver Knight Straight is more proportional to your character and the faster swings better mimic Gwyn's attacks.) Gwyn could form Great Spears of Pure Lightning, so I thought; why not give him the ability to coat his sword with it. I also thought it was pretty lame you had to sacrifice poise wear his full set, so I replaced his Bracelets with the Catarina Gauntlets. Hope that doesn't bother your "Cosplaying-Ego" if there is such a thing.
Black flame is there to simulate his hand-explosion move, but if you don't like that, and want a shield to parry with; Simply take off 3 attunement points, then add 1 to endurance and the rest to Vitality. (It'll raise your 25% encumbrance limit just enough to add a Small Leather Shield over the Pryomancy glove, as well as give ya' some extra HP, of course.)
