I quite like characters where the shield provides pure defense and the weapon is balanced in speed and damage, but the armor itself is not very impressive, making timing of blocking and striking the utmost importance. Havel's shield is as far as I know the best shield in the game, although you could swap it for the greatshield of artorias since it has the highest stability and also negates any status effects that hit the shield. If you don't like the ninja flip of the dark wood grain ring then just swap it for something else, like one of the tearstone rings, the cloranthy ring, the ring of favor or the wolf ring, although you could always up the difficulty of the game and wear the calamity ring. Hope this is a fun challenge.
