You could use the Hornet Ring instead of the Dark Wood Grain Ring but it would be too op. For the items, do as you wish. Same for pyromancies but I recommand sticking with the default ones. These spells have proven themselves for PvP as for PvE. About PvE, you could use a bow (I recommand using the Black Bow of Pharis). You can use a shield if you have issues with rolling through attacks.
