Run in there, shield up, and if you need to move quick use your whip/fireball. If you need to hit hard, use that ultra greatsword you got. You have awesome resistances, and are almost impossible to stun. You're also pretty fast, unlike other heavily armored builds. So run in there, beat things to death and take none of the damage.
