Pretty standard melee focused build. Not min/maxed but pretty solid all-around, and I like the look of our lady knight.
I find that the Claymore and Quelaag's complement each other very well. Generally for people with less than 56 poise, I'll use the Claymore to try to open them up to combos (but always check first to see if they're a proficient toggler). For the high poise builds, Quelaag's can be a nightmare if you can zone them properly with it. While it takes a while damage-wise, the reach of the weapon along with its speed makes it great for avoiding backstabs.
The bane of this build without weapon switching is flip katana...or really any flip/roll BS hunters. The Claymore is very susceptible to it, so I'd suggest going with Quelaag's or hot-swapping to a different weapon if you can tell you're fighting that kind of opponent.
Speaking of hot-swapping, you'll want to be able to quickly swap from Havel's ring to DWGR or Hornet as necessary; and it just so happens that if you remove the Cleric's Armor while doing so, you maintain fast roll/flip. It's not hard to do once you get the rhythm down. Good for spears in particular (DWGR). You can also just swap up to Wolf for some nasty poise and bear with the mid-roll, though I admit I haven't tried this much yet.
You've got a lot of weapon variety with this build given the 27/40 with decent weight allowance (shield is optional but nice in occasions), so try to mix it up and see what works best for you. As such, I feel this is quite a nice build for newer PvPers trying to familiarize themselves with the weapons.
One last reminder: the removal of Cleric's allowing a Havel ring switch will only work if your weapons total at most 9.6, so be wary of it.
No real source of AoE (aside, say, a rolling weapon swap from Drake R2 into Obs R2) is a real weakness of this build and can make it hard to deal with gankers, however.
