Pretty standard Claymore-centric Quality build. Not much about it is really set in stone, the core principal is really just sprinting along enemies' flanks while not locked on and catching them with the sprinting R1. It's fairly common as a strategy, but I really love it.
Composite bow is a great backup in my experience, and pairs well with feather arrows for a little range boost and excellent damage. No Attunement so this is not a build that will use any sort of magic or miracles.
Mobility and versatility are the advantages. Claymore is a very versatile weapon, as is the Comp bow, being useful even in short range. Two-hand your weapons, sprint, roll, hit, back off, repeat.
I don't do a ton of PvP so I can't speak of fine tuning for that purpose, but it rocks in PvE if you don't like magic and can switch between bow and sword on the fly.
Wolf or Cloranthy ring can easily be switched out with Bloodbite for the Lifehunt Scythe if you ever feel like it. In fact, any Dex weapon is yours to play with at 40 Dex.
Make use of item buffs and lobs in place of magic if you want, they work fine.
