Pretty much the only way to get a good Ornstein PvP build now days is to drop the Leo Ring and just use FaP and Havel's Ring for good HP/stamina + fast rolling.
You simply have to sacrifice too much stats for fast rolling now days, so the extra counter damage is not worth it compared to the vitality you have to lose.
This is pretty good, though. Dragonslayer Spear is an excellent weapon and the armor provides mediocre poise and good protection.
Always have WoG on faith builds for tight situations; estus chuggers, lag stabbers, etc.
