My personal take on a high-level quality build.
Stats are standard but, weapons have a bit of a twist; large, high scaling STR weapon paired with a small, high scaling DEX weapon. 2nd slots give some different options without breaking flavor entirely.
For Polearm mania, simply change LH1 to Lucerne or Scythe, and RH1 to Halberd.
Items and Covenant to taste.
