This is a build focused on killing bosses and giving you some resistance again attacks, the shield is undefined, you can use any shield because it depends on the situation. For the weapons, Uchigatana was my favorite and enchanted with lightning does a high damage,Quelaag's Furysword is the better option because his damage depends on your points of dexterity and how many souls you have in that moment, if you grab it dual-handed, the damage is insane.
