The whole point of Dexterity builts is that you can allways switch your weapon to other. Large scythe is the most demanding and heavyweight of them, so you can easily take Balder longsword, rapier, Falchion or even Uchigatana for for each situation. The same situation is with shield, from buckler to tower shield.
