This is a slight variation (Scythe instead of Gargoyle's Halberd + more END/less STR to make use of both weapons and a shield without having to switch out mid-combat) of a build I've been playing and really enjoying as of lately.
At level 50, this is a merchant (by means of PMs) and friendly co-operative hailing from Zena. S/he is armed with a bow alongside his/her halberd.
This is meant for assisting players primarily around Anor Londo, The Duke's Archives, Darkroot et cetera. Lingering Dragoncrest Ring can be swapped for the Red Tearstone Ring or whatever else might suit you depending on the circumstance. Only magic utilised is Power Within for some extra damage over a sustained period of time, and with about a hundred shy of 1000 HP, you really have to play well and dodge/counter appropriately.
This character loves parrying, but if it's less a priority for you, you might try the Dark Hand as a shield instead.
There's definitely a lot of roleplaying to this one and a pretty damn good amount of fashion for the look-inclined. For a more practical defense in a serious fight, swap for the Eastern Helm or the Royal Helm.
Intended as a fun co-op (or giftwraith) build for experienced players capable of still doing some good damage at a modest level of 50.
