Out-trading is your main win condition with 777 AR, max possible slash defense, and 91 poise.
Use mask of the mother until you take 180 damage and then swap to the giant helm if you want to min/max really hard.
Use the chloranthy ring for more R1 action or any other ring that fits the situation over having higher defense.
All pyromancies are available (although without max cast speed) and other miracles like great magic barrier are good if facing mages/buff builds. PO is great for PvE and fun. Use great heal if using arena. It's pretty dead, but it's 10+10% in DSR.
Untarget and attack at odd angles when fighting backstab fishers. Use WotG, kick, backstab or pyromancy to stop parry spam.
