Tried to pick medium armor with efficient poise, while looking pretty good (hence skipping hollow waist cloth).
Not completely sure on the weapons, but this much endurance should allow some flexibility. You can trade points between vitality and endurance to match your loadout.
Here's an outline of the steps for this build:
Grab estoc for the beginning.
Buy rapier, small leather shield, short bow, heater shield (falchion, uchi if you want) from undead merchant.
The rapier, small leather shield, short bow are for early levels with lower endurance.
I wanna use Solaire's armor so you can kill him here or go through his sunlight maggot questline (sorry).
Get knight set and Havel's ring from darkroot basin.
Farm gargoyles for the helm.
If you get Solaire's armor you can pump endurance to 28 and fast roll with Havel's ring.
From there do what you want to finish of the build.
You could replace Solaire's armor with the knight armor and hit 31 end with havels(instead of 28), then use lighter weapons or trade some vitality for endurance for the final build.
