It's simple really, just level up endurance so your thicc enough to wear full Havels set and use the Wolf Ring to boost poise by 40 points. Don't worry about any other stats if all you wan't is poise, as there is no stat that boosts poise. Also (thankfully) there's no dimenshing returns! nice. You can also use iron flesh to become literaly unstaggerable, infact it even works with zer0 poise!
