The limiting factor for this build is really the armor. It's not the best armor and you'd really rather have the wolf ring but you can't afford it since you DEFINITELY need Havel's and Hornet (you're sacrificing your shield for a parrying dagger, you better use it!). So, since you aren't going to go shieldless with medium rolls (bad idea, friend) you're stuck with 41 poise with an Estoc.
Needless to say, go for criticals and don't get hit.
