If any of you remember the video "Dark Souls is a very beginner friendly game" (which has since been copyright struck by YouTube, though you can find it here still https://www.youtube.com/watch?v=2DqMMRoAu9Y), you'll remember the classic SL 13 Giant Dad; however, I've improved it since then with a few things in mind:
1. This is primarily an OG Dark Souls build; I haven't played the remaster, but I know they change a lot of invasion rules, so this probably won't work nearly as well as a twinking build anymore
2. SL 13 -> SL 22: At SL 22, you can invade anybody at SL 10 or above (again, OG Dark Souls) while getting a lot of extra vitality, so while you may be missing out on pre-SL 9 invasions, you still get the vast majority of players this way (though if you want to invade lower, you can just lower the vitality stat)
3. While Bandit is more in line with OG Giantdad, Pyromancer allows for very slightly higher defense values at the same soul level with the same major stats, thus making it the preferred choice
4. Added the 2 black flames this time around (that means NG+ BITCHES); in practice, with people hiding behind their shields at early levels, you don't always want to have to swing the Zweihander to break their block, so Black Flame comes in handy in those cases (though most low level players are helpless against 3 FUCKING SWINGS (which this upgrade still retains, though if you don't care about the extra swing you can just lower your Endurance to as low as 13 while still maintaining midroll to squeeze out some extra SL))
I've won a decent number of fights against even higher SL players (50-90), though keep in mind you're still midrolling with shit health, so most higher level builds will wreck your shit up if you're not careful
As for items, Dung Pies are for inducing toxic if they try to dick around at a long range, Lloyd's Talismans are for keeping people from running and taking a sipp, and the separation crystal is for when you run into hackers
