This build is based for
One-on-one close quarters PvP/PvE, focusing on offensive playability as a defensive strategy, while maintaining enough POISE and defence to deal the damage during an attack.
For the humanity, you can farm the rats in Depths.
Combat-wise, the build features three curved greatswords, mostly for fashion, but also for interchangeable combat.
You can switch between the Server and Scimitar for either heavy damage output, or faster and agile move-set.
The Falchion serves as a complimentary weapon, that can attack and parry, while paired with either weapon, most typically with the Server since I loved the design.
The armour is mostly for aesthetics, something that looks bulky, especially to go with the curved swords, but I've found that the Helm & Armor alone offer good poise and look nice together: the hard leather Gauntlets & Boots are included for their lighter weight and fashion, but you can change that if you wish.
The miracles themselves offer more resourcefulness towards estus and homeward bones, so you can save those towards a special occasion. Force and WOTG are just offensive miracles for crowds best dealt with if simultaneously attacked, or on a ledge on a high pit.
In regards to strategy, I recommend that in PvE, enemies are singled out, and slain individually, unless you want to powerhouse an attack through multiple enemies at once with Server.
For PvP, try to bait an attack with the Scimitar, perhaps get some decent hits digged in if you have the chance, since the Scimitar is faster, and has a diverse range of move sets that can be used in unpredictable patterns. Perhaps use the Falchion to swing a couple hits just for the unpredictability factor to set into, for safe measures.
But the important factor is to wait for the perfect time to parry with Falchion, and switch to Server for a riposte, for a destructive critical hit.
I made the mistake of underestimating DEX, but the STR counts for the Server weapon scaling.
